This single serve breakfast was born out of desperation one morning. I can’t get enough Mexican flavors! I happened to be cleaning out my fridge one morning, and because of my love for Mexican food, this recipe was born! As written this is single serve recipe, BUT just increase the amount of ingredients for each person you want to serve this to. I will absolutely be making this again. Definitely on our next camping trip for sure!

This Mexican breakfast pizza is so customizable.

You can make this with whatever flavors you want. I literally used what was in my fridge. Also, next time, I won’t use a fried egg. It is able to be ate in hand and a fried egg makes that a bit more difficult. Fried or scrambled, both will be great. If you look closely, you can see a little bit of refried beans. That isn’t necessary and the carb count won’t put you too high. But, it isn’t necessary.

A low carb tortilla is the base.

There are so many low carb tortillas available today. I often the Mission brand, but you can use whatever you want. To crisp it up you have a few options. You can bake it, air fry it, or fry it in a skillet with some fat. I air fried mine. Whatever you want to do will work. You do want it crisp, not soft. Spice this up, make it dairy free, whatever you want. But, if you like Mexican food, make this soon for a yummy on plan breakfast.

Mexican Breakfast Pizza

Ingredients
  

  • 1 Low Carb Tortilla
  • 1-2 Eggs
  • 1/2 Ripe Avocado
  • 2 Pinches Salt
  • Chopped tomatoes
  • 1 t Line Juice
  • 1-2 T Refried Beans

Various toppings: Shredded cheese, Cilantro, Chopped Tomatoes, Salsa, Chopped Jalapenos, Diced Green Onions, etc.

    Instructions
     

    • Crisp up your tortilla by your desired method. Smear with refried beans if desired.
    • Make your guacamole. Mix avocado with the lime juice, salt, and chopped tomatoes.
    • Cook up your egg(s) however you want.
    • Top the guacamole with your egg. Top with desired toppings.
    • Eat.
