Blended Cottage Cheese Scrambled Eggs

These scrambled eggs are made with blended cottage cheese, they were cheesy and delicious.

I know another blended cottage cheese recipe. But hear me out. These are simple to make, up your protein, and are really good. I am working on upping my protein and protein powders and egg whites get old. Using blended cottage cheese has really been a great idea. I cooked these eggs “Gordon Ramsey” style.

He cooks his scrambled eggs slow and doesn’t season them until the end.

This was my first time trying all of these methods, and the results were perfect. Obviously the added cheese is optional. I used a little fresh grated cheddar and some shredded Parmesan with salt and pepper. You can go crazy with the cheese and seasoning, but I wanted to keep it simple.

My eggs are from my chickens so my mixture might be more yellow/orange than yours.

I also have banty chickens, so I used 4 eggs instead of two. They are pretty small eggs. I am short, so I didn’t make a massive plate of eggs. Use mine as a guide. If you need/want more eggs and cottage cheese, make it bigger. I am learning that protein also helps satiate you, so this kept me happy for at least 3 hours. You could also add a piece of low carb bread, some sliced avocado, salsa, etc.

Blended Cottage Cheese Scrambled Eggs

Ingredients
  

  • 1/3-1/2 C Cottage Cheese
  • 2 M-L Eggs
  • 1/2 T Butter

Desired Cheese and Seasonings

    Instructions
     

    • In a medium bowl place your cottage cheese. Or you can use a blender or food processor.
    • Crack your eggs into the same bowl. Blend with a handheld immersion blender. Blend until as smooth as you want.
    • In a skillet over low to medium low heat melt your butter.
    • If using cheese, get that ready. I also added my seasonings to the plate.
    • Add egg mixture to skillet.
    • You want the eggs to keep moving, slowly.
    • Once they are almost done, turn off the heat and stir in cheese and seasonings.
    • Serve warm.
