This is a an easy and family friendly low carb chicken cordon bleu casserole!
Comfort food is often loaded with carbs, but this chicken cordon bleu casserole isn’t. It is also incredibly easy to make. Nothing better than a yummy, rich dinner that takes no time at all to make. This is creamy casserole and perfect for dinner on busy days, as part of meal prep, or a family Sunday lunch. I know the picture doesn’t do it justice! This is definitely one of those dishes that underwhelms when you look at it, but the taste, It’s so good!
This dish uses precooked chicken.
You can buy a rotisserie chicken and use half or you can make some chicken during meal prep. I threw some chicken breasts in a crockpot and let them cook on low for a few hours. You could pressure cook them, bake them, honestly whatever is most convenient for you. I love to get a Costco chicken and find ways to use it in yummy meals. This would be perfect. Easy, creamy, comforting, and low carb, what isn’t there to like?
This casserole is so simple to prepare, you will be in and out of the kitchen in no time.

Easy and Family Friendly, Low Carb Chicken Cordon Bleu Casserole
Ingredients
- 1 1/2-2 Lb Boneless, Skinless Chicken, cooked
- 6-8 Slices of ham, chopped Or use leftover ham
- 1 T Lemon Juice
- 1 T Dijon Mustard, or use what you have
- 8 oz Cream Cheese, softened I used 1/3 Less fat
- 3/4 t Salt
- 1/2 t Pepper
- 1 t Garlic Powder
- 4 oz Butter
- 8 Slices of Swiss Cheese- use how many you need to cover the top or use shredded Swiss
Instructions
- In a microwave safe bowl place butter and cream cheese. Microwave for about 20-30 seconds. You want the butter mostly melted to make spreading on top easier.
- Take the bowl out of the microwave and add the seasoning, lemon juice, and mustard. Mix.
- In a 9×13 or similar pan, place chopped chicken.
- Top the chicken with the ham.
- Spread the cream cheese mixture on top of the ham.
- Top with your Swiss cheese. You can use shredded if you have it. I had sliced. I broke pieces to cover the whole pan.
- Bake at 350 degrees for 20-25 minutes, or until hot and bubbly but not too dark.
- I topped with dried parsley because it looked so bland.
- Serve with veggies. I served with a salad and frozen roasted veggies from Costco.
