This easy and delicious chicken bacon ranch casserole will be a hit with your family!
This casserole is low carb, but I would serve this to anyone. It is so easy to make and delicious! I have had this ready to make for a while now and I regret not making it sooner. If you have picky family members, this just might be a new favorite. If they like ranch, definitely add this recipe to your menu.
This casserole is creamy and full of flavor.
My only complaint is it doesn’t look as good as it tastes. It is so much better than it looks. I also added a bag of thawed and drained, cooked frozen spinach. This is my new favorite veggie to add to dishes. I have been adding it to so many things. I am not a spinach fan, but find this version to not be as strongly flavored. You can skip that if you want/need to. My family ate it as is and loved it.
To make this even easier, use half of a rotisserie chicken.
I absolutely love getting a rotisserie chicken from Costco or Sam’s. They make busy days so much easier. You could also cook your chicken ahead of time with your meal prep. This is the ranch I use. It isn’t perfect, but it works when I need convenience. We also don’t have it every week. Use whatever ranch you feel comfortable using. If you are more of a pure ingredient foodi, you can easily make your own.
Low Carb Chicken Bacon Ranch Casserole
Ingredients
- 1 1/2-2 Lb Cooked Chicken- You can use white or dark meat, or a combo. Season with a little salt, pepper, and garlic powder
- 2 Pk Dry Ranch Seasoning- I just look on the container and measure out two packages worth
- 8 oz Cream Cheese, softened You can use reduced fat
- 16 oz Sour Cream You can use non-fat Greek yogurt for some of the sour cream
- 12 oz Bag of Frozen Spinach, cooked and drained
- 1/2 t Salt
- 1/2 t Black Pepper
- 2.5 oz Package of Real Bacon Pieces You can cook your own if you want
Instructions
- In a 9×13 pan place your cooked chicken.
- In a mixing bowl, beat together the cream cheese, sour cream, and ranch seasoning.
- Scrape the sides and the spinach. Mix together.
- This is what it should look like.
- Spread on top of the chicken.
- Sprinkle the top with the bacon pieces. Bake at 350 degrees for 20 minutes or until hot.
- Serve with desired sides.
A family favorite. One I keep in my meal rotations.
