This low carb cheesecake fluff is the dessert to make!
This is the low carb dessert to make that people who are sugar-free will actually love. My hubby and kids, all picky, love this dessert. I have found that a lot of desserts made with cream cheese don’t have an off taste or texture. Finding desserts that are palatable to people who eat sugar, can be hard. But this is the one to make.
This cheesecake fluff is so simple and delicious.
Use whatever berries you like. I used a mix of blueberries and strawberries in the picture above. If you use frozen berries, I would thaw before stirring them in. It won’t be the same but it will be close. Make sure your cream cheese is softened, or it will end up lumpy. If you see lumps, make sure you keep beating the cream cheese until they are gone.
You can layer and make this look pretty or just mix in a bowl
You can go as fancy as you want. I typically just mix everything together. Fold in chocolate chips, chocolate shavings, nuts, etc. I have made this lots of different ways. This is probably my go to, simple recipe that everyone loves, perfect for get-togethers and cookouts.
Low Carb Cheesecake Fluff
Ingredients
- 1 Package of Cream Cheese Softened
- 1- 1 1/2 C Heavy Cream
- 2 C Trimmed and Diced Berries whatever you like and have on hand
- 1 t Vanilla Extract
- 1/2 t Almond Extract optional
- 1/3-1/2 C Powdered Sweetener, or to taste
Instructions
- Put cream cheese into a mixing bowl. Beat until soft. Add the sweetener and the extracts. Scrape the sides and beat again.
- Scrape cream cheese mixture into a bowl and add the heavy cream to the mixing bowl. Beat the heavy cream until thick.
- Combine the cream cheese mixture with the whipped cream mixture.
- Add berries and mix just until combined. Taste and add more sweetener if desired.
- Store in fridge until ready to eat.
