The saucy Italian stuffed sausage and peppers is low carb.
This is another one of those recipes that isn’t really a recipe, more of an idea. It is so easy and takes Italian sausage to the next level. Even though the recipe is super simple and easy, you could definitely serve this to company or a Sunday family dinner. You could prep this recipe ahead (up to the cheese) and store in the fridge until ready to cook.
The Italian sausages are stuffed with cheese!
I was looking for something to do with the mozzarella balls that I bought on sale. I settled on this for one of the packages. You could use string cheese (that would be easier) or slice mozzarella sticks instead of using the mozzarella balls. I am all about using what you have or using what you can find on sale.
If you have been around here for a bit, you know I cooked the life out of those peppers.
If you are new here, I am not a bell pepper fan. For me to have bell peppers in a meal and eat them, they have to be cooked. I mean really cooked. If you don’t mind a little firmness to your peppers, don’t cook them. This is my preference. You make this how your family will eat them.
Top this casserole with your marinara of choice and all of the cheese you want.
I have found at Aldi and Walmart a store brand that I like the taste and the cost is pretty good. That is what I often use in my recipes that call for marinara sauce. I topped this casserole with preshredded Italian blend cheese. I typically shred it myself but sometimes you use what you have. Top with as much or as little cheese as you want. The sausages are already stuffed with cheese, so you don’t have to go crazy. Finally, we ate this as is. You could top these with on plan pasta (or off plan for your kids) or stuff into bread. You have a few options on how you want to serve the stuffed Italian sausages.
Saucy Italian Cheese Stuffed Sausage and Peppers
Ingredients
- 8-10 Italian Sausages
- 8-10 Cheee Sticks Or Mozzarella Cheese Balls
- 23-24 oz Jarred Marinara
- 2 Med Bell Peppers, sliced into strips
- 1 M-L Onion, sliced into strips
- 1-2 T Olive Oil, for sautéing the veggies
- 1-3 C Shredded Mozzarealla Cheese
- Italian Seasoning to sprinkle on top
Instructions
- Slice your Italian sausages down lengthwise.
- Stuff your sausages with cheese.
- Try to seal your sausage as much as you can.
- Place all of your stuffed sausages into a 9×13 pan.
- If desried, cook your sausage and onion in a large skillet on medium to medium high heat. Cook as long as desired.
- Top your sausages and peppers with the marinara sauce. If you are meal prepping and storing in the fridge, I would stop here. I feel like the cheese might burn before the sausages get hot.
- Top with shredded cheese and Italian seasoning. Bake at 375 degrees for 30-35 minutes, until hot and bubbly.
- Serve hot with a green veggie on the side.
