This easy and delicious low carb Chicken Alfredo Dinner recipe is perfect!

This recipe is really simple and just uses basic ingredients, but the flavor is amazing!
This is another dump and go recipe (I am trying to come up with something different to call these recipes).
The convenience of dump and go recipes is so nice. But to have healthier versions- low carb recipes with the same convenience, I am so thankful. We can still serve our family meals that are healthier than their counterparts, but just as easy and quick. I also only used 1/2 a box of Dreamfields Penne Pasta. This recipe serves more than 4 (depending on the size of the people being served). I would say at least 6 servings. That is just barely 1/2 a serving of the pasta! Saving money and carbs.
Add veggies and you have a whole meal!
I added a package of cooked broccoli and cauliflower. I just wanted broccoli, but didn’t see one in my freezer. I think 2 packages of frozen, cooked veggies would be great. And cheap! You could use the packages of spinach that I have used those in so many recipes. Sometimes with littles, this will work and help them get in a veggie serving. Who am I kidding? Even big kids sometimes! I can’t recommend this recipe enough. Easy, filling, budget friendly, and family friendly!!
Low Carb Crockpot Chicken Alfredo
Ingredients
- 1 1/2 Lb Boneless, skinless Chicken (I used breasts)
- 1/2 C Broth
- 8 oz Cream Cheese, can use 1/3 less fat
- 1 1/2 C Heavy Cream
- 4 T Butter
- 3/4 t Salt
- 1/2 t Pepper
- 1 t Garlic Powder
- 1 t Italian Seasoning
- 1/2 C Parmesan Cheese, shredded
- 1/2 C Shredded Mozzarella, optional
- 1-2 Pkg Frozen Veggies, optional
Instructions
- In your crockpot place the chicken, chicken broth, cream cheese, heavy cream and butter.
- Allow to cook on high 3-4 hours or low 6. Stir occasionally, if you can.
- Remove chicken from crockpot. Add veggies if desired. If using veggies that are chunky, make sure you break them up. Cook pasta a little less than al dente.
- Shred or dice up cooked chicken.
- Add cooked pasta. Stir.
- Add shredded mozzarella and stir, if desired. Sprinkle the top with shredded Parmesan. Allow to melt and then serve. You can top with red pepper flakes, Italian seasoning, or parsley, if desired.
