Low carb waffles are so easy to make!
I think these are technically called chaffles because they have cheese in them, but they aren’t the kind made with shredded cheese. I tried those a couple times. That’s even why I bought my mini waffle maker. I don’t know what it was about the recipes I tried but I felt heavy after eating them. I tried again, making sure it wasn’t something else, but I felt heavy and almost sick again. I put up my mini waffle maker until today.

I am so excited with how easy there were to make. They only need a few ingredients, and they taste amazing!! I don’t share things that I don’t like on here. I am honest about my recipes and this is worth sharing and making a blog post for. I topped these with a very simple blueberry topping. I took about 1/3 cup of frozen wild blueberries, a tiny bit of water, and about 2 teaspoons of sweetener. I let it come to a boil and simmer while I made the waffles. So simple but so good!

The hardest part of this recipe is getting the cream cheese to blend into the eggs. I used reduced fat cream and I microwaved for 10 seconds. I mixed one egg in at a time. It took a couple minutes but that’s it. If you want to make these savory for a breakfast sandwich, leave out the sweetener and vanilla. You could definitely add some spices to the batter to change it up. Because this recipe is so easy and budget friendly, I can see me making these up weekly!! Definitely give this one a try and let me know what you think.
Super Easy and Simple Low Carb Waffle
Ingredients
- 2 oz Cream Cheese, I used reduced fat Softened
- 2 Eggs, preferably at room temperature, but not necessary
- 1-2 Splashes Vanilla
- 2 t Powdered Sweetener
- 1 Pinch Salt
- Few Shakes Cinnamon
Instructions
- Place cream cheese in a small microwavable bowl. Microwave for 10 seconds.
- Add in one egg and mix well. Add second egg and mix well. Try and smash the cream cheese that isn't mixed in against the sides.
- Add the vanilla, sweetener, salt, and cinnamon. Mix well.
- Have your mini waffle maker preheated. Spray with nonstick spray. Add about 1/4 of the batter to the waffle maker.
- It should look about like that. Close the lid and wait until it is light brown with some brown spots. Remove to a plate and repeat.
- This makes 4 mini waffles.
- Top if desired. I topped with the blueberries, a little sugar free syrup, and a little whipped cream.
