The ultimate crockpot beef barbacoa- easy and Low Carb

This beef barbacoa isn’t just easy and perfect for a low carb, it’s delicious! I wouldn’t call it authentic though. We have made friends with servers at our favorite Mexican restaurant. Where they are from, authentic barbacoa is made with a goat that you cook in the ground. In other areas it is made with beef cheek meat. I made this with a beef roast that I got at my local grocery store.

This barbacoa is so easy and simple to make.

It would also be a great freezer meal. I love the convenience of freezer meals, especially dump freezer meals. In this recipe I sear the meat. You don’t have to. If you want to make your life easier you can just dump everything into your crockpot or your freezer bag. If you have people who are sensitive to heat, as written this recipe has no heat in it. We just added heat individually to our plates.

You can make traditional tacos with the barbacoa or make whatever you want!

This recipe is versatile. Of course traditional barbacoa tacos for the first day. If you have leftovers, make low carb flautas. I use Mission low carb tortillas. You can just put the meat in plain, add a little cheese and sauce. Roll up and either fry in a skillet or airfry. Make tostadas, taco salad, burritos, etc. You could even make Mexican stuffed bell peppers. The Ultimate Crockpot Barbacoa Recipe- LC

Ingredients
  

  • 3 Lb Boneless Beef Roast
  • 1/2 C Beef Broth
  • 1 M-L Onion, diced
  • 3 T Minced Garlic
  • 1 T Salt
  • 1 T Chili Powder
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 t Cumin
  • 1 t Paprika
  • 1 t Black Pepper
  • 1 Lime, juiced
  • 1 T Fresh Minced Cilantro
  • A little oil to sear the roast

Instructions
 

  • Preheat a skillet over medium to medium high. Sprinkle a little salt and pepper on the roast. Add a little oil to your skillet and sear all sides of the roast. I used my Ninja Foodi to sear and slow cook the barbacoa.
  • While you are searing the roast, combine your dry ingredients.
  • Remove seared roast to a crockpot and add broth.
  • add onion, garlic, and seasonings. Cook on low for 8-9 hours.
  • Once cooked, shred. Add the juice of the lime and the cilantro.
  • Serve however desired.
