In a medium bowl place your cottage cheese. Or you can use a blender or food processor.
Crack your eggs into the same bowl. Blend with a handheld immersion blender. Blend until as smooth as you want.
In a skillet over low to medium low heat melt your butter.
If using cheese, get that ready. I also added my seasonings to the plate.
Add egg mixture to skillet.
You want the eggs to keep moving, slowly.
Once they are almost done, turn off the heat and stir in cheese and seasonings.
Serve warm.
