Additional seasonings as desired- Taste it at the end and add salt, pepper, extra seasonings as desired.
Instructions
Brown ground beef. Drain and rinse fat if desired. I used a colander in a bowl and toss fat in the trash.
Add microwaved cauliflower rice and frozen veggie blend.
Cook and cook and cook. Cook this mixture at least 10 minutes. I make sure you can't detect the cauliflower rice (my family aren't fans of riced cauliflower so I have to get rid of the texture and taste)
Add tomatoes, tomato sauce, and green chilies. Taste and add more seasonings as needed. I added salt, pepper, and some more chili powder and cumin.
Simmer and cook until all liquid has been absorbed. Serve as desired.
