Budget Friendly Burrito, Low Carb Burrito Bowl

 

This burrito bowl recipe is great for meal prep. It is low carb and full of veggies.

When budgets are tight, it pays to look through your freezer and pantry and see what you can find.  I pulled out a few ingredients and came up with this recipe. If you don’t need as much food, cut it in half. We have been eating this burrito bowl for days. I might even have enough to freeze!

This burrito bowl recipe is so versatile!

Above is how we ate it the first night. I put a lettuce base on the bottom. Added some of the burrito bowl mixture. Added this blended cottage cheese nacho cheese sauce, a few baked tortilla chips, salsa, and small dollop of sour cream. Hubby and boys went back for seconds. You can use this in quesadillas, tacos, casseroles, and more. I actually made chili with it last night!!

This is the chili I made. So simple, fast, and delicious.

You can add some canned beans if you like beans in your chili. Add some canned tomatoes and a little broth to thin it out. Taste and add some more seasonings, if desired. I can’t believe how versatile this burrito bowl has been. Burrito bowl, chili, tostadas and more. This has been such a frugal recipe and frugal week. The burrito bowl only cost me $12 to make. The meat and frozen veggies were on sale but you can make this for around $20 if you pay full price for everything.

This morning I used the burrito bowl to make breakfast tostadas.

I baked the small keto tortillas in my oven until crispy. I smeared the tortilla with a little avocado. I put about 1 cup of the burrito bowl mixture and heated it through. I added about 1/2 cup of carton egg whites. I topped each tortilla with lettuce, the meat mixture, the nacho sauce, and tomatoes. So delicious! Hubby loved them too.

Ingredients
  

  • 2 Lb Ground Meat- your choice of fat content
  • 12-16 oz Package of Frozen Riced Cauliflower
  • 12 oz Package of Frozen Onion and Pepper Blend
  • 10 oz Diced Tomatoes with Green Chiles
  • 8 oz Tomato Sauce
  • 4 oz Green Chiles
  • 1 T Minced Garlic
  • Taco Seasoning I make my own

Additional seasonings as desired- Taste it at the end and add salt, pepper, extra seasonings as desired.

    Instructions
     

    • Brown ground beef. Drain and rinse fat if desired. I used a colander in a bowl and toss fat in the trash.
    • Add microwaved cauliflower rice and frozen veggie blend.
    • Cook and cook and cook. Cook this mixture at least 10 minutes. I make sure you can't detect the cauliflower rice (my family aren't fans of riced cauliflower so I have to get rid of the texture and taste)
    • Add tomatoes, tomato sauce, and green chilies. Taste and add more seasonings as needed. I added salt, pepper, and some more chili powder and cumin.
    • Simmer and cook until all liquid has been absorbed. Serve as desired.
