This low carb bruschetta chicken is easy and delicious

We take vacations at least once a year with all of my kids, their spouses, and grandkids. When we were at the cabin everyone made at least one appetizer for New Year’s Eve. One of the ones I made was regular bruschetta. When I got home I was motivated to make something low carb. It was a hit!! I was so excited with how great this turned out!

This low carb bruschetta chicken recipe is so easy and healthy. If you are dairy free, leave out the cheese. It really wasn’t necessary. Love cheese? Add more if you want! This dish brings out all of these flavors so well. If you like Italian, definitely make this. Need something easy, healthy, and delicious, make this! Really, it’s that good.

I absolutely love having meals prepped. This last week I was sick and having meals prepped ended up being so much more helpful than I realized. My biggest tip, no matter what way of eating you follow, meal prepping keeps me eating healthy and out of the drive thru. When I prep my totes, dinner is cooking in no time!

Bruschetta Chicken

Ingredients
  

  • 2 Lb Boneless Skinless Chicken, I used breasts
  • 2 T Olive Oil
  • 2 T Balsamic Vinegar
  • 1 T Minced Garlic
  • 1 t Italian Seasoning
  • 1 t Salt
  • 1/2 t Black Pepper
  • 3/4 C Shredded Mozzarella or Parmesan
  • 1 1/2 C Chopped Tomatoes, I used grape and cut them in half
  • 1 T Minced Garlic
  • 1 T Olive Oil
  • 1 Sm Onion, Diced
  • 1/2 C Chopped Basil or 2-3 T dried
  • 2 t Balsamic Vinegar

Instructions
 

  • Marinate the chicken with the 2 T olive oil, 2 T balsamic vinegar, 1 T minced garlic, the 1 t Italian seasoning.
  • In a 9×13 pan, pour chicken and the marinade into the dish. In a 375 preheated oven. Bake for 20-25 minutes. You want your chicken to cooked through but not overcooked. When cooked, remove from the oven.
  • While the chicken is cooking, mix all of the remaining ingredients, except the cheese in a bowl.
  • Sprinkle the chicken with the mozzarella and the contents of the bowl.
  • Place in the oven for a few more minutes, if desired. Slice and serve with a yummy side. We had salad.
