My basil plant froze a couple months ago when I was out of town. I paid the crazy price for fresh from WalMart. Fresh isn’t essential to this recipe, but it did add a little extra flavor pop. Everyone didn’t add the basil, so it is really good without it. If you do use fresh basil. roll it up like the picture above. And then slice into strips. After it’s in strips, run your knife through it and chop into smaller pieces. You are basically chiffonading the basil.

Use noodles that are on plan that your family likes to add to the lasagna soup.

When I went to buy my dreamfields pasta for this soup, I could only find spaghetti noodles. I went 2 different WalMart stores and could only find spaghetti. I can’t recommend this lasagna soup enough. When you have cold weather, this soup should be on your menu. It really is absolutely easy and delicious.
