If you’ve been wanting a high‑protein dessert or snack that feels decadent but is still Low Carb–friendly and simple to make, these Chocolate Date Swirl Yogurt Parfaits are for you. They look fancy layered in a jar, but each part comes together in just a few minutes with basic ingredients you probably already have on hand.
You’ll make two quick sauces—a creamy date “caramel” and a rich chocolate sauce—then layer them with vanilla yogurt for a pretty, satisfying treat. These work for dessert, a snack, or even a light meal when you need something fast but filling.
Ingredients
Date Sauce (Date “Caramel”)
-
3 servings Medjool dates, soaked in hot water and drained
-
3/4 cup on‑plan milk of choice
-
Pinch of salt
-
Sprinkle of cinnamon, optional
Chocolate Sauce
-
1/4 cup raw cocoa powder
-
On‑plan sweetener of choice, to taste (if needed)
-
Just enough sugar-free syrup to make it smooth and spoonable
For Serving
-
On‑plan vanilla yogurt (such as sweetened non‑fat Greek yogurt with vanilla)
-
Optional toppings: chopped nuts, cocoa nibs, berries, unsweetened coconut, cinnamon
How to Make the Date Sauce
-
Soak the Medjool dates in hot water until they’re soft, then drain well.
-
Add the drained dates and 3/4 cup of milk of choice to a blender.
-
Blend until completely smooth and creamy, scraping down the sides as needed.
-
Add a pinch of salt and a sprinkle of cinnamon, then blend again and taste.
-
Adjust thickness with a splash more milk if needed. You want a thick, pourable sauce.
How to Make the Chocolate Sauce
-
In a small bowl, whisk together the raw cocoa powder and your sugar-free syrup.
-
Slowly add syrup, a little at a time, whisking until it turns into a smooth, glossy sauce that’s spoonable but not runny.
-
Taste and adjust sweetness if needed.
How to Assemble Chocolate Date Swirl Yogurt Parfaits
-
Add a layer of vanilla yogurt to the bottom of a clear jar or glass.
-
Spoon a layer of date sauce over the yogurt.
-
Drizzle with chocolate sauce.
-
Repeat the layers (yogurt, date sauce, chocolate sauce) until you reach the top of the jar.
-
Finish with a pretty swirl of chocolate and a drizzle of date sauce on top.
-
Add any toppings you like: nuts, cocoa nibs, berries, coconut, or extra cinnamon.
Serve right away or chill for a bit to let the flavors meld.

Here is another recipe that uses dates, it is absolutely delicious!!

Nutritional Data
I used 3 servings of dates. 3 servings of dates (the ones I used) is 81 net carbs, divided by 5 is 16. You can use more or less, depending on your tastes and needs. I like to make a few small jars for dessert. I add a little pistachios and chopped chocolate on top. I have also eaten larger bowls as my pre-workout breakfast.
Here is how I make my high protein vanilla yogurt. This is always in my fridge!

Date and Chocolate Yogurt Parfaits
Ingredients
- 3 Servings Medjool Dates, pitted
- 3/4 C Milk of Choice
- Few Shakes Cinnamon, optional
- 1/2 C Raw Cacao Powder I prefer the raw for the health benefits, but use what you have or can find
- 2-4 T Sugar-free Syrup I used Lakanto, you can just use your other sweetener if you don't have this
- 1 t Vanilla
- Sweetener to taste
- Water to get to the right consistency
- 1 Pinch Salt
Instructions
- Soak dates in very hot water. Drain. Blend with around 3/4 cup of milk of choice. You can add a couple dashes of cinnamon if desired. Pour into a container.

- Mix together cocoa powder, syrup, pinch of salt, vanilla, and a little water. Go slowly. When it's close to the consistency you want (I like a spponable but also close to pourable mix), start adding in sweetener. I used a lakanto allulose blend. Taste and adjust. I like mine to be sweet but not over the top.

- If you are going to make some parfaits, place some vanilla yogurt in a container. Top with some chocolate sauce. You can add a little of the date sauce if desired. Add more yogurt, more chocolate and some date sauce. Repeat as many times as desired. Depending on the jar, I do 2-3 layers. The top layer gets more date sauce (that is where the carbs and calories are, if this is a light dessert, I don't want to go too heavy on the dates).

- Here's one with more layers.

- And the completed jar. You can swirl the layers or keep them pretty level. This is such a nice treat at the end of the night, and I know it's so good for me.
