1/2CRaw Cacao PowderI prefer the raw for the health benefits, but use what you have or can find
2-4TSugar-free SyrupI used Lakanto, you can just use your other sweetener if you don't have this
1tVanilla
Sweetener to taste
Water to get to the right consistency
1PinchSalt
Instructions
Soak dates in very hot water. Drain. Blend with around 3/4 cup of milk of choice. You can add a couple dashes of cinnamon if desired. Pour into a container.
Mix together cocoa powder, syrup, pinch of salt, vanilla, and a little water. Go slowly. When it's close to the consistency you want (I like a spponable but also close to pourable mix), start adding in sweetener. I used a lakanto allulose blend. Taste and adjust. I like mine to be sweet but not over the top.
If you are going to make some parfaits, place some vanilla yogurt in a container. Top with some chocolate sauce. You can add a little of the date sauce if desired. Add more yogurt, more chocolate and some date sauce. Repeat as many times as desired. Depending on the jar, I do 2-3 layers. The top layer gets more date sauce (that is where the carbs and calories are, if this is a light dessert, I don't want to go too heavy on the dates).
Here's one with more layers.
And the completed jar. You can swirl the layers or keep them pretty level. This is such a nice treat at the end of the night, and I know it's so good for me.
